my godmother's cookies

here are copies of my godmother, maria's, best cookies recipes.
first one is the one people still were talking about
at her funeral.

i still remember her giving me a huge cookie tupperware container filled with the rolled ones (first one) @ my college graduation and making me promise to come visit her.

the family seems to be doing pretty well....checked on them late yesterday afternoon on my way to the improv....well, here it is: try it sometime, it's yummy!!

Maria’s Biscotti Involtini

4 C flour (sifted) 1 8-oz carton sour cream
3 cubes margarine, softened 1 TBSP vanilla
3 eggs (divided) Cinnamon sugar (about 1 C or more)
Confectioner's (powdered) sugar

Mix flour and margarine together (Maria did it by hand, so that’s the way I do it too)
Add three egg yolks, vanilla, and sour cream to the flour/margarine and mix thoroughly until a dough forms
Refrigerate the dough for 1 hour or more (the longer, the better – I usually do at least 4 hours)
Reserve the egg whites for now.

When you’re ready to assemble the cookies, beat the egg whites until stiff.
Divide the dough into 8 pieces. Roll each piece into a 8-9” circle using confectioner’s (powdered) sugar to roll it out on.
Brush the top of the circle with some egg whites, and sprinkle on more confectioner’s sugar and cinnamon sugar. It’s hard to describe how much sugar to add. I just add it until the circle is thinly covered with the sugars.
Next divide the circle into 8 triangular pieces using a pastry wheel or knife. Roll each piece beginning at the wide end.
Place each cookie on a greased baking sheet. Top each cookie with a bit of egg white and sprinkle on more cinnamon sugar. Bake at 350 degrees for 20 minutes.

Note: I make my own cinnamon sugar instead of buying the little bottles at the store, which are expensive. I take 1C of sugar and add about one-fourth cup or so. That may be too much cinnamon for you, so you might want to adjust it for your own taste.




Maria’s Palette Cookies

4 ½ C flour (sifted) ½ tsp salt
1 C nuts, finely chopped 4 cubes margarine, softened
2 tsp vanilla

Blend all ingredients together to form dough.
Roll dough into small balls and place on lightly greased baking sheet.
Bake for 15 minutes in a 350 degree oven.
While still warm, carefully roll balls in powdered sugar.
Place on a rack to cool.
